Baked Wheat Flour Meethi Mathri (sweet)

Wheat Flour Meethi Mathri & Baked not fried & are super easy to make, Perfect little snack. Happy elders & happy kid.








Ingredients

1&1/2 cup wheat flour
8 tbsp sugar
1 tsp baking powder or 1/2 tsp baking soda
5 tbsp oil
1/4 tsp cardamom powder







Mix all things together & use some water to make a soft dough. Make small bolls, Now make any shape you like.
Preheat oven & Grease a tray.
Bake the matthis on 180.C  for 14 min.
Let it cool & store in airtight jar .

fish shape pizza

Try out pizza in new shape.









Ingredients
for base

1 cup maida
1/4 tsp baking powder
1/4 tsp oregano
1/2 tsp sugar
salt to taste 
1 tsp olive oil or veg. oil
1/2 cup water (warm)

for toppings

1 1/2 tsp schezwan sauce
1 tbsp tomato sauce
salt to taste
1 cheese cube shredded
1 onion chopped
1/2 capsicum chopped
1 tomato sliced
1/2 tsp oregano
1/4 tsp red chilli flakes



Mix all things together & make a dough with the help of water ( use water as needed) .
Dough should be smooth...use some oil to smooth it ....
Take a pizza pan & grease it.
Divede the dough in two part. Roll the dough with the help of  roller. Now cut it as shown in picture.


Preheat your MW.
Brush the rolled dough with oil, Mix 1 tsp schezwan sauce with tomato sauce & spread it on base. Put the veggies on & then  Sprinkle some salt & fold it. Make another fish just like it. use black pepper or clove to make eyes.



Bake it for 14 min on 190.c . then MW on high for 30 second.
Sprinkle oregano & chilli flakes. Serve HOT..

Moong daal halwa

A mouth watering dessert and a traditional sweet.








Ingredients


1 cup dhuli moong dal soaked and grind
1 cup deshi Ghee
1 tbsp besan
pinch of yellow color
1 cup milk
1 cup Sugar
4 tbsp milk powder
4 tbsp condensed milk 
1 cardamom crushed or powdered
10 almonds in sliced










Heat ghee in a non-stick karahi, now add besan.
Add moong dal and mix well. Stir continuously on low heat and fry till golden brown.
Add color in warm milk and mix well.
Mix sugar and 1 cup water in a pan & dissolves sugar. Add milk to moong dal mix well & keep stirring.
Micro condensed milk & milk powder together for 4 min,
Add condeansed milk mixtuer,  cardamom,  almond and sugar syrup to moong dal.
Mix well & cook on low heat for 5 minutes covered.
Turn off heat, serve hot garnished with  almond.

chana gughri

Chana-Gughni My mom used to make it on Sunday.
We had it almost every Sunday. 
Sweet little childhood memory.






Ingredients

1 cup kala chana (black chickpeas)
2 onion sliced
5 clove garlic crushed
2 green chilli
1 tsp cumin seeds
pinch of heeng
1 tsp garam masala
2 tbsp oil
1/2 tsp red chilli powder
1/4 tsp turmeric
1 tsp coriander powder
salt to taste








Soak the kala chana overnight.
Heat oil in a pressure cooker, Add cumin seeds & heeng. Add chilli stir now add garlic.saute for few seconds.
Now add onion fry till soft, add garam masala, coriander powder, red chilli powder, turmeric powder & salt. Add chana & 1/2  cup water. Cover the lid & after 1  whistle low the flame & cook for 10 minutes.
Off the flame & enjoy with some namkeen.

Sweet & Salty Whe

Sweet & Salty Wheat crackers, My daughter (sharanya) liked it so much & finished a whole batch of crackers.
it's simple & fast.











Ingredients

1 cup wheat flour
1/2 cup all purpose flour
1 tsp butter
1/4 cup oil
1 tsp salt
1 1/2 tbsp sugar
1/4 tsp baking soda
1 tbsp thick curd
5 tbsp milk
1 tsp ajwain



Mix all ingredients except milk with your fingers.





Now add the milk & make a smooth dough. If needed add some more milk ( 1 tbsp) to knee the dough. Dough should be very smooth.





Roll the dough with the help of flour in a thin layer & cut it with cookie cutter. I used a cap to cut the shape.
Now prick it with fork.
Grease a tray & Preheat the oven & bake it on 180.C for 10-12 min.
Let it cool & store in airtight jar.
Enjoy with your tea or coffee.

No yeast Bread

Finely My First Bread ready.
It's No Yeast, it's egg less, It's Whole Wheat, It's Cheese, It's Italiano, it's Indiano.






ingredients

3 cup Wheat flour
1 tbsp sugar
1 tsp baking powder
2 tbsp whole flax seeds
1 tbsp cumin seeds
1 tsp sesame seeds
1 tsp salt
1 tsp oregano
1 cheese cube grated
2 tbsp Indian Cottage Cheese
2 cup club soda 







Mix all dry things together in a big bowl. Add 2 cup soda & combined everything well.
Put the dough into a greased loft pan. Sprinkle some cumin & sesame seeds on top.
Now bake it at 200.C for 45 min or till toothpick comes out clean.
Let it cool down & cut it. Enjoy it with some fresh butter or thick flavored curd.

Coconut whole wheat cookies

Coconut whole wheat cookies, buttery, addictive,Thin & super crispy , you can't stop at one . easy to bake cookies...













Ingredients

1 cup wheat flour
1/2 cup Sugar
4 tbsp coconut powder 
1 tbsp Almonds crushed
 1 tbsp Suji
1/2 cup Butter
1 tsp Baking powder
1/4 tsp Cardamom Powder
4 tsp Milk




Mix all dry things together in a bowl, melt the butter now add the dry mixture make a smooth dough. 
Dough should be very smooth . divide it and make desired shape. Keep it thin. Grease the baking tray.
Preheat the oven, Now bake the cookies  at 170. C for 12-15 minutes. Keep an eye after 10 minutes,cookies gets baked soon.
cool it & transfer to a air tight container. 
Enjoy it with your favorite masala chai.

Oat sandwich

Whole wheat oat sandwich...... Healthy & tasty ,a perfect Breakfast & lunch box for kids
Simple and delicious,  this is a fantastic breakfast &  full of flavor.....








Ingredients

21/2 tbsp oats
3 tbsp thick yogurt
1 grated carrot
1/2 grated capsicum
1 small grated onion
pinch of black pepper powder
salt to taste
1 tsp honey





Roast & grind 21/2 tsp oats, mix it with thick yogurt .
Add grated carrot, grated capsicum, grated onion , honey,  pinch of black pepper powder & salt mix well.
Stuff it in whole wheat bread & make sandwich. toast it & enjoy.

Matthi in Microwave convection

Atta Matthi in Microwave,
Is it crunchy ? yes
is it healthy ? yes
is it fast ? yes
So no frying anymore enjoy.





Ingredients

1 cup atta
2 tbsp oil (for moin)
1/2 tsp ajwain
1/4 tea spoon chilli flakes or black pepper powder (according to your taste)
salt to taste
1/4 Tsp baking powder






Mix all well & make a soft dough using water, make small ball & roll matthi. Prick it with knife or fork ,both side. 
Preheat MW on 200. for 5 min (on convection mode). 
Now bake matthi on 170. from one side for 5 min then turn it & bake it from another side for 5 or 6 min as required.
Let them cool & store in air tight.
Enjoy matthi with tea or coffee.

Shahi Tukda Baked

Baked Shahi Tukda, yes you heard it right..A Nawabi dessert
No oil for frying, guilt free tukda with thick Rabdi.
Prefect sweet for after dinner or lunch.I always prefer simple dishes, Tukda, chashni in Microwave & Rabdi on gas & a sweet from Jannat ready.






Ingredients 

4 slices Bread (sliced)
1 tbsp Ghee
1 cup Full Cream Milk
1 tbsp condensed milk
2 tbsp Pistachio sliced
1 tsp sugar
1/4 cup Sugar
1/4 cup Water
1/2 tsp Cardamom powder
2-3 Almonds sliced





Cut the edges of the bread & cut it in triangles.
Mix sugar and water and set the mixture to microwave bowl for 4 min. Now add cardamom powder into it.
Heat a pan and set the milk to boil. Simmer it, When layer of a cream appears on the surface, shift it towards the side of a pan.
Repeat the process for next cream layers. Cook until milk is reduced to 1/3 of original quantity.Add 1 tsp sugar.Now, add pistachio to the milk.
Scrap cream collected on the side of the pan. Cook for 1 min. 7 switch of the flame.
Brush ghee on the sides of the bread. Now bake it on 180.C for 8 min or till brown. Turn it in between 2 times.
Dip the bread pieces into hot sugar syrup for 2 min. drain well
Arrange the bread on a plate.
Spread the Rabree onto the bread and sprinkle some almonds, pistachio and sliced rose petals over it.

Chill it and serve.

No yeast, No cheese pizza

No yeast pizza ... OK so what's so special in it ?
Special...LOL....It's NO Cheese Pizza tooooo....
A pizza with liquid paneer or u can say paneer paste 
SO schezwan pizza ....no yeast, no cheese










Ingredients
for base

1 cup maida
1/4 tsp baking powder
1/2 tsp sugar
salt to taste 
1 tsp olive oil or veg. oil
1/2 cup water (warm)

for toppings

3 tbsp paneer
1 1/2 tsp schezwan sauce
1 tbsp tomato sauce
salt to taste
1 1/2 tbsp thick curd
1 onion chopped
1/2 capsicum chopped
1 tomato sliced
1/2 tsp oregano
1/4 tsp red chilli flakes





Mix all things together & make a dough with the help of water ( use water as needed) .
Dough should be smooth very smooth...use some oil to smooth it ....
Take a pizza pan & grease it spread the dough with the help of your hand or roller.
Prick it with the help of a fork . 
Preheat your MW.
Grind paneer, curd, some salt  & 1 tsp water.make a smooth paste. Divide it in two part. Mix 1/2 tsp schezwan sauce in one part.
Brush the rolled dough with oil, Mix 1 tsp schezwan sauce with tomato sauce & spread it on base.
Now spread schezwan paneer paste on it. Put the veggies on & then spread the plain paneer paste on Sprinkle some salt  & bake it for 14 min on 190.c . then MW on high for 30 second.
Sprinkle oregano & chilli flakes. Serve HOT.


 You can sprinkle some grated paneer too.
