Once again mango season, so something new to create form mango ? ok so peshe-khidmat hai "Mango Idli" Sweet one................ :-)
1/2 Cup suzi
1 Mango ( half cut in pieces & half puree )
2 Tbsp sugar
1/4 Tsp green cardamom powder
1 Tbsp coconut grated
1 Tbsp thick curd
2 Tbsp chopped dry fruits of your choice
1 Tbsp Ghee
1/2 Tsp ENO or fruit salt
Hot ghee in a pan, Roast dry fruit in it. Now add suji , sugar & 1/2 cup water, cook for 1 minuet.Now add mango puree,coconut & some more water if needed for a thick consistency & cook for 4-5 min. more.
switch of the flame add cardamom & let it rest for 5 min. add mango pieces & curd. Mix well.add fruit salt in the batter, just before steaming the idli.
Pour this mixture in Idli mould to 1/2 level. Steam for 10 minutes.
In a microwave bowl take ghee, dry fruit micro for 30 second. Now add suji, sugar, coconut, mango puree, cardamom & 1 cup water. Cover the lid & microwave for 1 more minuet.
Let it rest for 5 min, add mango pieces & curd. Mix well.add fruit salt in the batter, just before steaming the idli.
Pour this mixture in Idli mould upto 1/2 level. Steam for 4 minutes.
Garnish the idli batches with almond or any dry fruit of your choice before steaming.
You can serve these sweet idlis with honey or any fruit crush.
